Red Snapper Almandine
(Red snapper filets lightly floured and pan-fried with brown butter-lemon- almond-parsley sauce)
Sole Dugléré  (a French Classic)                        
(Filet of sole, poached in white wine, mushrooms, tomatoes and shallots finished with a tarragon infused fish veloute sauce)
Salmon en Papillote/ Méditerranéen 
(Salmon filets with fennel, onions, fresh herbs, olives, white wine and capers baked inside parchment paper envelope)
