Red Snapper Almandine
Red snapper filets lightly floured and pan-fried with brown butter-lemon- almond-parsley sauce
Sole Dugléré                        
Filet of sole, poached in white wine, mushrooms, tomatoes and shallots finished with a tarragon infused fish veloute sauce
Salmon en Papillote/ Méditerranéen 
Salmon filets with fennel, onions, fresh herbs, olives, white wine and capers baked in parchment paper
