Char-grilled Eggplants with Caramelized Onions( Mezghaldi B’Besla Bil Boudenjal)
Caramelized onion and chargrilled egplant w/ saffron, cinamon, ginger and allspice 
Fish Tagine w/ Potato, Tomato, Olives and Dried Figs (Hout Tungera)
Firm white fish layered with  potato, fresh herbs, olives, tomato, spices and dried figs
Orange and Radish Salad (Shlada Litchine Wa’ L’ Fegel)
Orange segments, sliced radishes and fresh mint with a little orange blossom water and olive oil
Semolina-Almond Biscuits (Ghoriba)
Butter cookies made with fine semolina flour, almonds and almond extract
