A refreshing salad of watercress, arugula and tart apple, tossed in a light champagne vinaigrette
Poulet en Croûte 
Seared chicken breast w/shitaki mushrooms and fontina cheese, wrapped in puff pastry and baked to golden brown.
Tomates farcies au Four
Baked tomatoes stuffed w/peas and pearl onions in sauce béchamel, topped w/herbed bread crumb 
Bananes Flambées au Rhum   
Bananas sautéed in brown sugar, lemon and butter, flambéed in rum and served over ice cream
