Classic French Sauces I:
Saturday, April 3, 2010 (11am - 2pm)

  • Béchamel (basic white sauce): Cream Sauce, Mornay, Soubise, and Moutarde
  • Velouté (stock based sauce): Suprême, Shrimp Sauce, and Aurora
  • Basic Mayonnaise and Aïoli (garlic)

Classic French Sauces II:
Saturday, April 10, 2010 (11am - 2pm)

  • Basic Brown Sauce (sauce Espagnole): Chasseur- Hunter’s Style, Marchand de Vin (wine merchant), Sauce Robert
  • Hollandaise and Béarnaise (w/tarragon reduction)
  • Beurre Blanc (classic butter and wine sauce)
  • Individuals, groups, couples and kids welcome!
