Oeufs Pochés/ Poached Eggs Florentine
(Fresh free range eggs poached to perfection with creamed spinach and hollandaise sauce/ learn the secrets to the “do ahead” poaching method implemented in fine dining Restaurants)
Sauce Hollandaise 
(Light, airy and buttery hollandaise sauce with fresh lemon)
Omelette aux Fines Herbes
(The simple and sublime, French “rolled” omelet with fresh herbs)
American Omelet
(Classic American or Diner style “fold over” omelet with various filling)
