San Juan to Trinidad/ (125.) per person/ 3-hour class
Avocado, Romaine and Grapefruit Salad (leeward and wayward islands)
Light refreshing salad of grapefruit segments, avocado, and crisp romaine.
Carne Guisada (found throughout the Spanish speaking islands of the Caribbean)
Zesty Caribbean Beef Stew cooked in brown ale, spices and black eyed peas.
Arroz con Habichuelas (Spanish speaking islands/including Americas)
Rice, vegetables and red beans with salt pork and annatto oil.
Flan de Coco (Spanish speaking islands/including Americas)
Creamy coconut custard flan with caramelized sugar.

Jamaica Mon’ and Grand Cayman Islands/ (125.) per person/ 3-hour class
Tomato, Heart of Palm and Onion Salad (All over/wayward islands)
Fresh sliced tomatoes, heart of palm and onion in a tangy mustard dressing.
Jerk Chicken (Jamaica Mon’)
Chicken with an aromatic spice rub, fresh ginger, hot peppers and scallions-cooked over the grill.
Cayman Island Shrimp Patties (Grand Cayman Island)
Crispy fried shrimp patties with garlic and fresh herbs.
Captain Morgan’s Rum Cake (Jamaica and Puerto Rico)
Drunken rum soaked butter cake.

Cucumber, Tomato and Quinoa Salad (St Lucia)
Quinoa, cucumber, tomato, chilies and fresh mint in a zesty dressing.
Court Bouillon de Poisson (French speaking Guadeloupe and Martinique)
Fresh Red Snapper, slow simmered in a broth of lime juice, vermouth, peppers, garlic, allspice, onions and green onions. Served with rice, fried plantains and avocado.
Fried Plantains/ Jasmine Rice with Sweet Peas (All over/leeward islands)
Ripe plantains fried to golden brown.
Lazy Island Lime Pie (All over/including Americas)
Tart lime pie baked in a flaky crust topped with a meringue.

Refreshing orange spinach and arugula salad with a citrus vinaigrette.
Cerdo Asado a la Cubano (Cuban Pork Roast)
Marinated pork shoulder roast, with cumin, black peppercorn, sherry and citrus.
Havana Black Bean Stew with Rice (Cuba)
Slow cooked black beans with onions, fresh herbs, chilies in coconut milk.
Bananes Flambées (Cuba, Jamaica, Puerto Rico and French speaking Islands)
Bananas flambeed in dark rum, brown sugar and cinnamon served over ice cream.
