In this class we’ll create an alluring array of the most delicious, freshly made Asian wraps and dumplings. Chinese Pot Stickers (Jiǎozi)-with soy-ginger dipping sauce, Thai Beef Lettuce Wraps- with lemon grass, fresh ground grass fed beef, Thai basil and kaffir lime leaves, Filipino Lumpia with sweet chili sauce and Vietnamese Spring Rolls with peanut sauce. These tantalizing wraps and dumplings are an absolute hit at cocktail parties, luncheons, buffets and dinner parties! Really fun to make too!

Embark upon an amazing culinary adventure creating this sumptuous Moroccan Feast! Create a myriad of tantalizingly delicious, freshly baked Danish Cookies and Aebleskivers. In this class we'll make: Pebernødder (little “peppernut” cookies with white pepper, cinnamon, cardamom, citrus zest and other spices) Klassiske Vaniljekranse (classic wreath shaped Danish vanilla-butter cookies) Danish Brunkager (crunchy-crisp-shingle shaped brown cookies with molasses, cinnamon, clove, ginger, allspice, almonds and pistachios) Aebleskiver (pancake balls cooked stovetop in a special Aebleskiver pan, dusted with powdered sugar and served with dipping jams…yum!)

Master the artistry and sublime elegance in creating these amazing, light and airy sweet and savory soufflés! A perfect way to jazz up the holidays and impress your guests! These mouthwatering delicious soufflés are fun and easy to make once you know the techniques and tricks of the trade!

Chicken Cookery Class/ La Cuisine du Poulet Wednesday, January 10th/ 6pm to 9pm/ 125.) per person/ open
A stress-free approach to the essential methods and techniques of chicken cookery (braising, roasting and sautéing). In this class, you will learn to create these amazing chicken cookery dishes with an air of confidence and the most delicious, palate pleasing results! Coq au Vin (Chicken fricassee braised in a luscious red wine sauce of mushrooms, pearl onions and bacon lardons), Poulet Rôti (The perfect, whole roasted chicken w/ fresh herbs, lemons, and aromatics), Sauté de Poulet au Citron et aux Câpres (Sautéed boneless, skinless chicken breast paillards w/ lemon, caper, parsley, and butter sauce) Accompanied with tomato Provençal, roasted creamer rosemary potatoes and sauteed green beans or arugula salad.

Learn to make fresh, scratch made egg pasta dough, rolled out into sheets, and fashioned into stuffed, handcrafted ravioli as well as mountains of fresh cut fettuccine all with a combination of savory sauces: Fettuccine with Basil-Arugula-Spinach Pesto (Fresh cut, homemade egg fettuccine with basil-arugula-spinach-garlic-almond pesto)
Ravioli al Formaggio con Sugo di Pomodoro (Cheese Ravioli with Tomato-Basil-Oregano Sauce)

An uncomplicated approach to the methods of Fish Cookery, implementing a variety of cooking techniques (baking, steaming, pan-fry roasting and poaching) all with delicious sauces, accompaniments, and the most amazing results! Wild Cod Baked in Parchment w/ julienne vegetables and herbed compound butter, Perfectly Poached Salmon w/ tarragon-parsley-lemon-caper dressing and Pan Fried/ Roasted Sea Bass w/ roast garlic-red bell pepper sauce and broccolini.
