Palmiers (aka “elephant ears” or French hearts)

Sweet and crispy, flaky puff pastry hearts, aka: palm leaves or elephant ears

Tartes aux Fruits Frais

Fresh fruit tarts with homemade lemon curd, sweet pastry shells (pâte sucrée) topped with fresh berries, kiwi, and finished with an apricot glaze.

Profiteroles

Petite cream puffs (pâte à choux dough) filled with ice cream or pastry cream (crème patissière), draped in chocolate sauce
